MONTHLY GOALS + BACON-WRAPPED MEATLOAF

I am still feeling so good about the new year. I think it's going to be such a great year for Luke and I, and so far, my goals and resolutions have been going wonderfully. It feels so good to be in the kitchen making home-cooked meals. Who knew that the thing I was too lazy to do before would turn into something I love doing. I just need to keep it up so that all of these "resolutions" become habits.

Here's a list of things I'm trying to get done in January//

01 | continue to make at least one new recipe for dinner a week.
02 | organize and make second bedroom guest-ready.
03 | make a goodwill trip to drop off all of the stuff we've decided to get rid of (yay!)
04 | get a library card!
05 | eat dinner at the table together at least 4 times a week.
06 | begin application process for my WV teaching license.
07 | bake a loaf of bread

Bacon-wrapped Meatloaf Recipe via (slightly altered) The Pioneer Woman

Ingredients//

1 c. milk
7 slices of white bread
2 lbs. ground beef
1 c. grated parmesan cheese
1/4 tsp. Lawry's seasoned salt
freshly ground pepper (to taste)
1/3 c. minced parsley
4 eggs, beaten
10 slices of bacon

For sauce//
1.5 c. ketchup
1/3 c. brown sugar
1 tsp. dry mustard
Tabasco sauce (to taste)

01 | Preheat oven to 350 degrees.

02 | Pour milk over bread in a bowl, and let soak for several minutes (or until milk is soaked up).

03 | Place ground beef, milk-soaked bread, parmesan cheese, Lawry's seasoned salt, salt, pepper, and parsley in a large mixing bowl. Beat eggs in separate bowl and then pour over meat mixture.

04 | Using your hands, mix all ingredients together until well mixed. Form the mixture into a loaf shape on a broiler pan.

05 | Lay bacon over the top of loaf, tucking the ends underneath to help it hold it's shape.

06 | Make the sauce by mixing ketchup, brown sugar, dry mustard, and Tabasco in a bowl. Stir until well mixed. Spread 1/3 of sauce mixture over the top of the meatloaf.

07 | Bake for 45 minutes, and then add another 1/3 of sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce for dipping.

 Best meatloaf (and easiest) I've ever eaten, you guys. Seriously! Give it a try.

    I, too, am trying to cook more this year. I'm aiming for simple, healthy meals. This looks yummy. I love the Pioneer Woman!

  2. I wish I liked meatloaf! hehe. My goal is to tackle my walk-in closet so I can actually walk into it...It will definitely be a challenge but I'm up for it!!
